Thirsty Thursday – Raspberry Beer Cocktail

We’re starting a new weekly series, Thirsty Thursday, where we’ll share easy drink recipes for you to enjoy at home. You don’t have to be a master mixologist to mix these up, but we promise your friends will be impressed!

Yesterday was April 1 and it was no foolin’ that Chicago hit 70 degrees–while we know it may not last long here, the streets came alive and everyone was ready to enjoy a cocktail! My favorite go-to cocktail when the weather warms up is a (dangerously) delicious Raspberry Beer Cocktail. Any time I’ve made it for a gathering, friends cannot get enough. So hit the store and stir up a batch for 2 to 20 people! I’ve included the recipe below, which I usually double to fill a gallon pitcher.

Ingredients
3/4 cup frozen raspberries
3 1/2 (12-oz.) bottles beer, chilled–You can use a basic light beer or sweeten it with a wheat beer.
1 (12-oz.) container frozen raspberry lemonade concentrate, thawed
1/2 cup vodka
Garnish: lemon and lime slices

Preparation
Mix together beer, thawed raspberry lemonade concentrate and vodka. Stir in the raspberries (frozen or fresh). Pour over ice to serve and garnish with lemon and lime slices. Easy as that–cheers!
